Kristina bought a new electric smoker a little while ago, but hasn't had any time to really try it out -- until now. We had the Prokops over for dinner tonight, so she decided to break it out and smoke a pork shoulder. It was excellent and met rave reviews from all. It was an awesome combination of smoky (she used Pecan wood), but still juicy too. We'll have to try it again with a bigger one! :)
She also make some other new recipes that are worth sharing. For appetizers, we had Cilantro and Jalapeno Hummus. It was great! It reminded both Jared and Kristina of guacamole without the avocado. She served it with pita and tortilla chips. Akiko loves caprese salad and Kristina is rocking the basil this year, so Kristina made this Caprese Salad. It was wondeful too; it would have been even better if we could have had some better tomatoes (they are still coming into season in the Pacific Northwest).

For dessert, Kristina made Skillet S'Mores and Peanut Butter Cup Skillet Cookie. Again, both of these rocked! The Skillet S'Mores is a nice spin on the traditional s'mores and more eatable in our opinion. And what's not to love about Peanut Butter Cup Skillet Cookie -- add a little vanilla ice cream to warm cookie -- that's what we call heavenly!
